Easy Recipe: Chicken Noodle Soup with PB&J Puffs

I love to cook. Those who know me know that I tend to get a little creative when I do. I'm constantly asked for recipes that I don't have. I don't have recipes because I'm generally just throwing things together in an effort to use what I have and reduce waste. Many meals are recycled leftovers or a hodge-podge of ingredients about to go bad. 

But my fancy cooking style was really born out of necessity. When you don't have a lot of money, but you have 5 mouths to feed, (3 of which are picky children), you improvise. 

I've put sauces in shot glasses and used different serving dishes to dress up a plain meal. I've used fancy foodie lingo, such as calling a burger with no buns a "deconstructed burger" - because we couldn't afford buns.

My family has loved it!

We have money to eat well now, but I still make deconstructed burgers and use different serving wear to dress things up. And I sometimes still rely on simple, inexpensive ingredients. Especially when I'm short on energy and time... Such was the case today. So here's an extremely cheap, pretty, and yummy meal idea that's perfect for a cold & rainy day. My kids and hubby gobbled it up! 

Chicken Noodle Soup with PB&J Puffs

Ingredients
*2 cans of generic condensed chicken noodle soup: (39 cents each).
*1 avocado (79 cents).
*Cilantro to taste (79 cents per bunch).
*1 can of generic canned biscuits (85 cents).
*4 tbsp peanut butter ($2 for a jar).
* 4 tbsp jelly  ($1 for a jar)

 Directions
*Pour the soup and two cans of water into a saucepan and heat on medium.
*Open the biscuits and flatten each one in the palm of your hand. 
*Add a small dollop of peanut butter and apple butter to one of the flattened biscuits and then pinch it close (it should resemble a ball). 
*Place the pinched side down on a cookie sheet. 
*Repeat with remaining biscuits. 
*Bake as directed.
*Slice the avocado and chop the cilantro
*Serve soup topped with avocado and cilantro.
*Add the baked rolls on the side. 
*Eat and enjoy!



Serves 4 people at $1.55 per person (with leftover cilantro, peanut butter, and jelly for more meals).
